Tasting Notes:
Golden yellow in colour with a fine, persistent mousse, the nose is expressive and complex, revealing aromas of ripe apple, pear and citrus peel alongside notes of white flowers, brioche and gentle spice. The palate is fresh and finely textured, with orchard fruit, lemon and subtle stone-fruit flavours carried by vibrant acidity and delicate bubbles. Savoury, yeasty and mineral notes add depth, leading to a dry, lively and persistent finish.
Winemaking:
Produced from carefully selected grapes grown in biodynamically farmed vineyards and made with a minimal-intervention approach. Fermentation with indigenous yeasts preserves the wine’s natural character, while secondary fermentation creates its fine effervescence. Extended lees ageing adds texture and complexity, with restrained handling allowing freshness, fruit and mineral expression to remain at the forefront.
